With the "Dubai chocolate" boom, shelves have filled up with pistachio creams. The problem? Almost nobody states how much pistachio is really inside — often just 5-8%, stretched with oils, sugar and flavourings. We do the opposite: we tell you the percentage and let you choose. Here's our ladder and how to navigate it.

What the percentage really means
The percentage tells you how much pistachio is in the jar. The rest is everything else: in a 5-8% cream that "rest" is vegetable oils, sugar and flavourings that mimic the taste cheaply. The higher the percentage, the more it tastes of real pistachio and the less added sugar and fat it needs. That's why our 100% needs no sugar: the pistachio is enough on its own.
How to read the label in 30 seconds
You don't need to be an expert. Four checks are enough:
- Is the percentage stated? If it's missing, it's usually because it's low.
- What's the first ingredient? In a serious cream it's pistachio, not sugar or oil.
- Is the origin traceable? Ours is Sicilian pistachio, organic and certified.
- What colour is it? A bright, uniform green is often dye or added chlorophyll: real pistachio tends to a duller, almost ochre green.
The most common buying mistakes
The first is going by price alone: an authentic pistachio cream can't be very cheap, because pistachio is the expensive raw material. The second is trusting the word "artisan" with no percentage or origin — these are free terms, not guarantees. The third is thinking "greener = better": the opposite is true.
Which to choose for each use
To eat by the spoon or if you want zero sugar, the 100%. To spread on bread, fill and cook, the 60% Suprema is the sweet spot. To start, at breakfast or for kids, the 30%. And for Dubai chocolate? The 60% gives a soft, spreadable filling; the 100% an intense, sugar-free taste.
