The universal honey

If there were one honey to recommend to someone who has never eaten honey, it would undoubtedly be acacia. Very delicate, sweet but never cloying, with that almost transparent colour that astonishes at first glance. It's the honey of the black locust tree (Robinia pseudoacacia), which blooms for just two weeks in late spring — a brief window that requires perfect timing from bees (and beekeepers).

Why it stays liquid

Its most famous characteristic is that it doesn't crystallise. This is neither a defect nor a treatment: it's the natural consequence of very high fructose content (up to 55%) compared to glucose. Fructose remains in solution even at low temperatures — this is why acacia honey stays liquid in your pantry even for years.

How to use it every day

  • Instead of sugar in tea, coffee, herbal teas: it dissolves instantly and doesn't alter the flavour of drinks.
  • On pancakes and rusks — the breakfast classic, with butter or alone.
  • In spoon desserts — tiramisu, cheesecake, panna cotta: adds sweetness without masking other flavours.
  • In fruit salads — enhances delicate fruits without overpowering them.
  • For weaning — paediatricians recommend it as a sweetener for children after 12 months, thanks to its universally accepted taste.
