Bay Laurel: Much More Than a Cooking Herb

In the kitchen, we tend to think of bay laurel as "a leaf for the stew". Two leaves in broth, one in a roast, something in a pot. But this plant — Laurus nobilis, for the ancient Romans the symbol of poets and victors (the word "laureate" comes from it) — has a life far beyond cooking.

In traditional medicine, bay laurel was used for millennia as a digestive aid, anti-inflammatory, antimicrobial. In aromatherapy, its essential oil calms the nerves. But in Southern Italian culinary tradition, it found its most elegant expression: the bay laurel liqueur, called "allorino" or "laurino" depending on the region.

A Country Digestivo, A Home Ritual

While limoncello conquered the world and industrial amaros colonised bar counters, bay laurel liqueur has remained in the dimension where it was born: country kitchens, grandmothers' recipes, tiny home distilleries. Every Southern Italian family had its recipe, substantially identical in proportions but personalised in infusion times and sweetness level.

Fresh bay leaves — harvested in May, when essential oil content is at its peak — are left to infuse in alcohol for two or three weeks. Then cane sugar syrup and water are added, the mixture is bottled, left to rest another month. Four ingredients, three weeks, a result rich in aromas.

How This Bottle Is Made

The base: organic Sicilian bay leaves, selected fresh at the right moment of the season. Organic pure hydrated alcohol, organic raw cane sugar, water — the other ingredients. Nothing more. The 1% bay laurel in the final product is the ideal quantity: enough to dominate the aroma, never so much as to give unpleasantly bitter or medicinal flavours.

The method is cold infusion — the most delicate. No aggressive distillation that would burn the subtler aromas, no added flavourings that would betray the original recipe. The amber colour you see is natural: it comes from the chlorophylls and essential oils of the leaves slowly pigmenting the alcohol during infusion. A fluorescent-green bay laurel liqueur, in fact, is always artificially coloured — be wary.

How and When to Drink It

As a digestivo, after meals. The classic. Ice-cold, in small digestivo glasses, after a heavy dinner. The 28% alcohol — traditional Sicilian digestivo strength — makes it bold yet clean, ideal to close a rich dinner. Bay laurel actively aids the digestion of proteins, a property well documented in traditional pharmacology.

As an aromatic aperitif. Two fingers in an ice glass, a splash of soda, a fresh bay leaf to decorate. Unexpected, aromatic, elegant. Even more interesting: stretch it with Prosecco for a "Bay Spritz" — the new Italian bar trend that rediscovers regional digestivi in cocktails.

In cooking. A dash to deglaze a pork roast, a spoonful in a kid ragù, a splash on panna cotta before serving. Bay laurel in liquid form lets you flavour dishes where you could never put whole leaves.

Southern Italian Pairings

In traditional Southern cuisine, bay laurel liqueur is served after meals based on:

Fatty meats and roasts — the liqueur cuts the richness and perfumes.
Legumes and seasonal soups — after a minestrone or a fava bean soup, it opens the stomach.
Aged cheeses — caciocavallo, pecorino, salted ricotta. Bay laurel dialogues well with strong flavours.
Almond desserts — pastiera, hazelnut cakes, amaretti biscuits. The herbaceous aroma balances the sweet.
