The ingredients list is the shortest you can read on a jar: organic Sicilian pistachio. Full stop. No adjectives, no explanatory notes, no "other" hidden. It's pistachio reduced to a cream, nothing else.

Why it separates (and it's a good thing)
Opening the jar you may find a layer of pistachio oil on the surface. It's normal and positive: it means there are no added emulsifiers. It's the same phenomenon of artisan tahini or natural peanut butter. Just stir with a spoon before use. The oil is rich in monounsaturated fatty acids and should be preserved, not eliminated.
Recipe: Homemade sweet pistachio cream
Combine 180 g of this 100% cream with 80 g of icing sugar and 20 g of softened cocoa butter. Mix with a whisk. You'll get a "Suprema-style" pistachio cream as sweet as you want — never again surprised by the sweetness of commercial creams.
